Our barrel-aging beers focus on what happens during that long maturation period in the wood. A combination of oxidation through the wood, absorption of what was previously in the barrel—Bourbon, Scotch, wine, etc.—as well as the extractives from the barrel’s wood. All of these factors are intriguing and exciting, but there’s an element of chance. When everything goes to plan, when the variables unite a barrel-aged beer is magical.
